Single Traveler - Stopover at Dubai City

Hello,
I am traveling to Bangkok with a stopover at Dubai and
would like to know how long my stopover is allowed. Also, am I allowed any time on my return trip? I am an American citizen. I plan to fly via Emirates Air.

I also would like to know the best location for a single traveler who likes to walk. I, of course, would like to see your "ski" area and other highlights of your country. Is it possible to cover these highlights in two days?
